Pumpkin & Sage Ravioli With Apple & Pecans

Ingredients:

1 (6 oz) pkg heat-and-eat glazed pecans
1 Gala apple
1 tsp McCormick cinnamon sugar
1 tbsp butter
1 (9 oz) pkg Simply Enjoy Pumpkin and Sage Ravioli
How to Make It:
1.Prepare ravioli according to package directions. While ravioli boils, chop the pecans, peel and matchstick-slice the apple, then toss the apple in cinnamon-sugar.
2.In a large skillet, melt the butter, add chopped pecans and apple sticks, and sauté for 1 min. When ravioli is ready, top with pecan-apple mix, and serve.

Nori Bowl

Ingredients:

2 cups Water
1 cup brown rice
1 cup shelled edamame, frozen
3 sheets nori seaweed wrappers
2 teaspoons canola oil
1 ( 14 oz.) pkg extra-firm tofu
1 medium carrot, shredded
1 each pickling cucumber, peeled and diced
1 each ripe avocado, cubed
½ cup orange juice
1 tablespoon sesame oil
1 tablespoon unseasoned rice vinegar
2 teaspoons Minced fresh ginger
½ teaspoon Crushed red pepper flakes
2 teaspoons soy sauce
2 tablespoons Sesame seeds

How to Make It:
1.Place water and rice in a medium saucepan. Bring to a boil, reduce heat, and simmer, covered, until tender, about 25 minutes. Remove from heat, drain any excess water, fluff, and let cool.
2.While rice cooks, in a separate saucepan, prepare edamame according to package directions. Drain and set aside.
3.Heat a large nonstick skillet over medium heat. Add nori sheets to the pan, one at a time, and toast until fragrant, about 30 to 45 seconds per side. Set nori aside, raise heat to medium-high and add canola oil to skillet. Drain tofu and pat dry. Cut the block lengthwise into 4 equal pieces. Cook tofu slices until golden, about 4 minutes per side. Let cool enough to handle; thencut each slice lengthwise into 4 pieces; then cut the bunch in half crosswise.
4.Place cooled rice in a large bowl and toss with edamame, tofu, carrot, cucumber, and avocado. Crumble or coarsely chop nori and add to the bowl.
5.Place orange juice, sesame oil, rice vinegar, ginger, red pepper flakes, and soy sauce in a blender and blend until combined. Alternately, place in a jar with a tight-fitting lid and shake well until blended. Toss dressing with rice mixture. Divide among 4 serving bowls and garnish with sesame seeds. Serve at room temperature.

Easy Pizza Pasta Bake

Ingredients:

4 cups dry rotini pasta
4 ½ cups marinara sauce
3 oz uncured pepperoni
2 bell peppers, any color sliced into thin strips
½ cup black olives sliced
1 ½ cups shredded mozzarella cheese
¾ cup shredded parmesan or asiago cheese
¾ tsp dried Italian seasoning
½ tsp each, dried garlic and onion powders

How to Make It:
1.Preheat oven to 375 degrees.
2.Cook pasta until al dente. Drain well and combine with marinara sauce, sliced peppers, olives, pepperoni, dry seasonings, and ¾ of the cheese. Stir together until well mixed.
3.Pour pasta into a 9×13 baking dish and garnish with remaining cheese and additional pepperoni slices. Bake uncovered for 25-30 minutes, or until cheese is golden and bubbly.

Orange Carne Asada Fajitas

Ingredients:

1 pound skirt steak
1 Sunkist® lime, juiced
1 cup Sunkist® Valencia orange, juice and zest
2 garlic cloves, smashed
½ cup cilantro, chopped
1 jalapeno, stems and seeds removed, minced
1 tablespoon distilled white vinegar
¼ cup olive oil
Fajitas

4 tablespoons olive oil
2 teaspoons cumin, ground
1 teaspoon coriander, ground
2 garlic cloves, chopped fine
1 jalapeno, chopped (stem and seeds removed)
1 red bell pepper, cut into short thin strips (stem and seeds removed)
1 green bell pepper, cut into short thin strips (stem and seeds removed)
1 medium red onion, peeled and diced
2 tablespoon cilantro, chopped
1 Sunkist® Valencia orange, zest and juice
4 tortillas
kosher salt and black pepper to taste
How to Make It:
In a container, combine all carne asada ingredients and allow to marinate overnight.
Remove the meat from the marinade and wipe any ingredients off of the meat.
Season the meat well on both sides with salt and pepper and allow to sit for 10 minutes.
Heat a cast iron pan on the stove or grill and cook the meat to a medium rare temperature.
Allow the meat to rest for 5 minutes before slicing.
Combine sliced carne asada meat with fajita ingredients (recipe below).
Zest 1 Sunkist orange over 4 tortillas; heat a pan over high heat and add the tortillas, toast on both sides for about 15-20 seconds each side.
Add mixture to tortilla and serve.
Fajitas

In a sauté pan, heat the oil and spices over medium high heat.
Cook for about 1 minute to toast the spices, add in garlic and jalapeno.
Stir and cook for another minute, until the garlic and jalapeno are wilted.
Add the peppers and onions and season with salt and pepper; stir well to incorporate.
Cook for 10-12 minutes, until the vegetables are soft.
Remove from heat and add cilantro and Sunkist orange juice.
Mix in the sliced carne asada steak and toss together.
